Ingredients
- 1 tin of mackerel in tomato sauce
- 200g spaghetti
- 2 cloves garlic, minced
- 1 red chilli, thinly sliced
- Olive oil
- Fresh parsley, chopped
- Grated Parmesan cheese
Quick Steps
- Cook the spaghetti according to the package instructions.
- In a large pan, heat olive oil and sauté the garlic and chilli until fragrant.
- Add the mackerel and tomato sauce, breaking up the fish slightly.
- Toss in the cooked spaghetti and mix well.
- Serve with chopped parsley and grated Parmesan on top.
Cooking Tip: Add a splash of pasta water to the sauce for a silkier texture.
Detailed Steps
- Cook the spaghetti: Bring a pot of salted water to a boil and cook the spaghetti according to the package instructions. Reserve a cup of pasta water before draining.
- Prepare the garlic and chilli: While the pasta is cooking, mince the garlic and thinly slice the red chilli. This will add spice and depth of flavour to the dish.
- Sauté the aromatics: In a large pan, heat a good drizzle of olive oil over medium heat. Add the minced garlic and sliced chilli. Sauté for a couple of minutes until the garlic is fragrant but not browned.
- Add the mackerel: Add the tin of mackerel with the tomato sauce to the pan. Break up the mackerel gently with a spoon, allowing it to mix into the sauce. Let it heat through for a few minutes.
- Combine with pasta: Add the cooked spaghetti to the pan with the mackerel sauce. Toss everything together, adding a splash of reserved pasta water to loosen the sauce and help it coat the pasta.
- Finish and serve: Once the pasta is well-coated in the sauce, remove the pan from heat. Serve immediately, garnished with freshly chopped parsley and grated Parmesan cheese for added flavour.
