  1. Soften rice paper wrappers in warm water.
  2. Place trout, avocado, cucumber, mint, and basil on each wrapper.

  1. Prepare the ingredients: Drain and flake the trout. Slice the avocado, julienne the cucumber, and gather the fresh mint and basil leaves.
  2. Soften the rice paper wrappers: Fill a shallow dish with warm water. Dip each rice paper wrapper into the water for about 10-15 seconds until softened, then lay it flat on a clean surface.
  3. Assemble the rolls: Place a few mint and basil leaves in the centre of each softened rice paper. Add some flaked trout, followed by a few slices of avocado and julienned cucumber.
  4. Roll the rice paper: Fold the bottom of the wrapper up over the filling, then fold in the sides and roll tightly to form a neat roll. Repeat with the remaining wrappers and filling.
  5. Prepare the dipping sauce: In a small bowl, mix soy sauce, lime juice, and a dash of honey for a balanced dipping sauce that complements the rolls.
  6. Serve: Arrange the rice paper rolls on a platter and serve with the dipping sauce on the side. These rolls are best enjoyed fresh.
